At just 13 years old, starry-eyed Alberto Lombardi left his home of Forli, Italy to travel the world and learn the tricks of the trade to becoming a successful restauranteur. After making Dallas his home by accident nearly 40 years ago, Lombardi went on to begin his work at The Pyramid Room of The Fairmont Hotel where he later served as Manager of the Fairmont’s Venetian Room. Lombardi’s early found passion in the culinary industry led way to the creation of Bistro 31 in the fall of 2011, which was given the name in homage of Highland Park Village’s original structure date of 1931. Bistro 31 was brought to life through Lombardi’s global travels and culinary experiences, reflected in each of his dishes.
With Lombardi Family Concepts’ already established success, audiences had high expectations for Bistro 31 to be nothing short of exceptional. After six years here in HP Village, it’s safe to say that the sophisticated yet charming restaurant has certainly delivered, creating unique experiences and memories for all who visit. It is with a vast knowledge of the culinary arts that Executive Chef David Garwacki cooks up signature dishes such as the Grilled Scottish Salmon with a vegetable medley. And of course, a meal at Bistro 31 just isn’t complete without the finale of a decadent Olive Oil Cake with Orange Caramel.
